Halloween Recipe ~ Giant Pumpkin Cookies s/s

 

Giant Pumpkin
Cookies
 
For the cookies: 1 ¾ cups
all-purpose flour 1 teaspoon baking powder ½ teaspoon salt ½ cup (1
stick) sweet butter ½ cup superfine sugar 2 eggs 1 teaspoon vanilla
extract For the icing: 2 cups confectioners' sugar ¼ cup milk
Orange and black food color Royal icing, to decorate Orange and green
sugar crystals Preheat the oven to 350 degrees F. Sift the flour, baking
powder, and salt together in a bowl. In a separate bowl, beat the butter and
sugar and add the eggs and vanilla. Stir the dry ingredients to form a smooth
dough. Wrap the dough in parchment and refrigerate until firm. Cut the dough in
half and roll out each piece on a lightly floured sheet of parchment to ¼ inch
thick. Cut out a large pumpkin shape either freehand or use a stencil cut from
thickened card or plastic. Lift onto a baking sheet. Bake for 12 to 15 minutes
until golden. Cool on a baking sheet and transfer to a wire rack. When
completely cool, combine the icing ingredients, and decorate. Store in an
airtight container for 5 to 7 days.
